How I Celebrated
So, never having chocolate souffle before, I would have to say this recipe I made up seems to be like a 3 out of 5 stars. It has some of the characteristics of what other photos look like and describe besides a couple of things. It does have that crisp brownie-like topping. It is light and very chocolate-y. It rose up out of the sides of the pan without sticking, and it tastes really good. Obviously I did not cook it in a ramekin (though, I did see some others that were cooked in large cake pans as well). Also, If I wanted a more moist lava cake texture I probably could have taken it out a bit sooner/ made more chocolate sauce to fold in.
Some of the recipes that I saw did separate their chocolate sauce, but I used an orange funfetti cake mix and I wanted the cake to be uniformly chocolate and at the very least brown instead of orange. So, yeah. I used the Pillsbury orange funfetti mix (a smaller mix than the boxes) that I folded into 6 egg whites that I whipped. Oh, another thing that may have made my texture EVEN better was if I put either lemon juice or cream of tartar in there ( I didn't. I was trying to make this on the fly and whipping those eggs by hand made me impatient already). I melted 1/2cup of unsalted butter on the stove and melted in 2 whole bars of 70% dark chocolate bars. Then I added about 1/3 cup of whole milk. After the cake mix was mixed into the whipped eggs (that seemed to deflate as I mixed in the cake mix, kind of frustrating), Then I mixed in the chocolate sauce. (This is where I should have separated it). I didn't mix it up too much, but I put it in my greased/sugared glass pan. It went into the oven for 40 min. Voila! Delicious.
