How I Celebrated
Because it was a triple day today with Epiphany Cake Day, Bean Day, and Shortbread Day, it was hard to decide what to do. Shortbread sounded easy enough to make, but it required a lot of butter. So, Nate just went and got some shortbread cookies from the store. They were pretty generic and boring, so I came up with this idea to make it a bit more fun, and we could incorporate the epiphany cake colors on top. If you wanted to one up me and make it an epiphany parfait AND include bean day, you could hide a bean in one of them and then see who chokes on the bean or who breaks their teeth on it (that is why I didn't do it this time). Or, I guess you could do the shave ice thing and put the sweet beans as a layer in in your parfait. I am celebrating bean day by listening to Brak and reading about Sean Bean on Nerdist

Sugar Free
Sugar is one of the main ingredients for the shortbread, so make sure you find a good sugar free recipe that you like.
Being a cake, you will also have to substitute sugar in the traditional King Cake recipe.
Beans are sugar free on their own, make your own recipes with beans or be sure to check ingredients in pre-made dishes.Gluten Free
Because flour is a key ingredient, shortbread cookies are a bit more complicated to make gluten free.
Same goes for the King Cake.
However, beans are already gluten free so go ahead and eat up.
Vegetarian
All three foods are vegetarian!

History
National Day Calendar gave me a great idea to have shortbread cookies whenever I one day some day in the distant future ever hopefully get a house. Cause I am already married and well cookies are delicious:"In Shetland (northeast of mainland Britain) , it is tradition to break a decorated shortbread cake over the head of a new bride upon her entrance of her new home."Finally! An article from somewhere new that talks about food holiday history! Huffington Post did some light digging (and supplied us with a new source) and found that Bean Day may be commemorating the death of Gregor Mendel. If you remember biology class, he is the one who did the cross breeding of bean plants to come up with his genetics/inheritance theory.
The King Cake Celebrates Epiphany day, the day that the wise men/ three kings visited the Christ Child. Each of the colors are a symbol of something. Purple is justice, green is faith, and gold is power. [Source]

- Viktor Benes Bakery is the first that came up when I searched for shortbread cookies.
- My boss brought us back some of Walker's shortbread to try when he returned from a trip to the UK. I have to say it was pretty delicious. It may just be the best...
- My guess is going to be you will get the most authentic and delicious king cakes at bakeries like Gambino's out in Louisiana
- So far in my searching, King Cakes are hard to come by in Los Angeles. Porto's is one that I have found.
- I asked my husband, Nate what restaurant he thinks of when he thinks of beans. He said Ixtapa in West Linn, Oregon.
