How I Celebrated
I was worried about this one so I took some matters into my own hands. I cooked down some frozen blueberries in water with sugar and honey and tried to reduce it before adding corn starch to make filling. I definitely started with too much water and most of the filling boiled out of the crust. The crust was a pre made gluten free crust we found in the freezer section of the dollar store. It is pretty salty and because I didn't think about reducing heat and cooking time because of the smaller scale in the muffin tins, some of the edges got extra crisp (burnt). They are still much better than I imagined a blueberry pie would be, and I bet they would be fantastic with ice cream.
