Oatmeal raisin cookies just killing two birds with one stone. It has been a while since I had homemade ones. They are so good. At least the raisins aren't a surprise.

How I Celebrated

I was worried about this one so I took some matters into my own hands. I cooked down some frozen blueberries in water with sugar and honey and tried to reduce it before adding corn starch to make filling. I definitely started with too much water and most of the filling boiled out of the crust. The crust was a pre made gluten free crust we found in the freezer section of the dollar store. It is pretty salty and because I didn't think about reducing heat and cooking time because of the smaller scale in the muffin tins, some of the edges got extra crisp (burnt). They are still much better than I imagined a blueberry pie would be, and I bet they would be fantastic with ice cream.

How I Celebrated

Today was such a glorious day. I don't think I can express how delicious my food was. Nate went to the neighborhood butcher and got the prime rib. He won't tell me how much he paid because he pulled a Molly and panicked keeping the butcher in business, just buying it cause we needed it and cause social anxiety makes you feel pressured to do anything to get out of a situation. I woke up to mouth watering smells and Nate searing the already slow roasted meat. He only cooked one of the two steaks and it looked rare and delicious. Since it was the night before/ he was preparing me my lunch for work, it was rare so that I could warm it up again in the microwave (so sad for a prime cut, right?) But I had a few bites off of the large chop of fat that Nate doesn't seem to like. I think I could have died right then it was that heavenly. Anyhow, my video shows it not so rare, along side a healthy helping of mashed potatoes. My half was now a bit dry from the microwave, but still 100% worth whatever ridiculous price Nate had to pay because I enjoyed and savored every bite. This actually might have been the first steak Nate has ever bought and prepared while we have been married!!

How I Celebrated

My proportions were a bit off with the hot dogs and biscuits. I didn't realize they would puff up so much (shows you how much I cook biscuits). The dough also does not stretch well so I didn't feel like I could stretch it over the whole hot dog. Pretty good snack, but could use some sauce. Mate is so delicious. I just started mixing with lemon this month. Pretty tasty. I only used milk and honey this time though.

Nate did a great job on this no bake cheesecake. He used the cool whip recipe and a can of cherry pie filling. I think this was a different brand because it didn't make me vomit! Yay! Neither the cheesecake nor the cherries tasted too strong and it wasn't super sweet. For me this was all plus plus plus, maybe not for some of you.

How I Celebrated

No lima beans in the house today. I added some flax seed meal and some chia seeds and a bit of extra oil to my batter. Also, no stupid cherries on the bottom of my cake. Pure amazing.

How I Celebrated

Rice is my favorite food. I was trying to decide if I wanted to make a Japanese style rice ball or the Italian ones. I had a lot of cheese ball left over from a few days ago, so I decided to mix that in and go the Italian way. After mixing the cheese and rice together, I rolled them in little balls, gave them an egg wash and rice flour coating and fried them in coconut oil with a few cloves of garlic (it is also garlic day). The only thing I would change is to put a bit more salt in the flour coating. Dipping them in ketchup was pretty good too. Overall, fried foods are such a hassle, but they taste pretty delicious.

My cheese ball is very simple and I didn't get nuts for the outside so there is just more shredded cheese.

How I Celebrated

Ever since I saw eggs benedict on Food Network, I have been wanting to try it. For my first time, it was pretty good. The hollandaise was pretty lemony, I don't know if that is how it was supposed to taste, but it came out a good consistency even though I had to use oil and not butter (it probably would have had a much more buttery taste). Also, I did my poached eggs in the oven in muffin tins because I wanted them to look more uniform, and I read it was pretty easy. But, I  used duck eggs so I did not know how long exactly to put them in and they did not look like they were forming. They are a bit overcooked as the yolks were not runny (sad face). Everything else was pretty good and Nate really liked them too! Oh, those little mushroom things for the mushroom day part were a bit spicy but really sad because they were not crispy at all and still very oily. Sad day for that company. Always get fresh, guys!

 Punchbowl says eggs benedict was yesterday, but you can see what they had to say at least. I don't think I have ever tried eggs benedict. I have not been very fond of eggs for much of my life, deviled eggs were probably my favorite and then egg and potato salad. But after living in Hawaii with Loco Moco, that has definitely changed. I still never wanted to try poached eggs until I saw something on Food Network that made it look really delicious. Maybe it was the gravy, I don't know.

How I Celebrated

So the peach cobbler that Nate made in the crock pot was super delicious. He warned me that it was runny because the recipe called for pie filling and not just canned peaches like we used. I should have just made a thicker pie filling for him with cornstarch and sugar so that wouldn't be a problem, but it did have a more mushy consistency. I would probably compare it to a cake pop consistency so it isn't gross, just not what you would expect for a peach cobbler.

How I Celebrated

Grilled cheese are one of my staple meals I probably eat like at least once every month or two. Easy and tasty and I love to pair it with soup, especially tomato soup (thanks school lunch for getting me hooked on that sodium fest). Couldn't find real licorice though (Nate says that only black licorice is real licorice) and we didn't make it back to the store to get the licorice I like (strawberry twizzlers 100). Ah well.

I ate more microwaved quesadillas growing up than grilled cheeses, but now I love using my griddle. Buttery, bread and cheesy goodness. I need my vegetables to taste like that. Liquorice is meh. How I Celebrated

Well, I did have some dried out aging cheese to experiment with/ finish in my fondue. It was mozzarella. I melted it down with some butter and coconut oil and bit of milk.  It was a guess. It melted and it tasted fine, I dunno, I wasn't too excited for it, sorry! Nate brought me pizza last night so I was pretty cheesed out!

I tried using the buttermilk biscuit dough to make cinnamon croissants. I guess I do not have the patience or skill to make very thin and flaky layers. Also, it could be the cheap dough with whatever fake butter substitute they have inside haha. Tastes ok. Not too sweet. But I would say that I think adding nutella is a bit much. Instant regret. Very heavy.
