How I Celebrated



Setting the gold standard for the internets


It took me a while to decide how I wanted my lemon. Sliced, squeezed over my mussels, but I decided that water was the way to go since I had orange slices and the mussels were pre seasoned. The taters are actually "potato crowns" I think Nate said. Hmm the things companies call their food these days.

History

I think it was clams that my aunts were gathering in the ocean in New Zealand when I visited. That was my first experience in a low tide that spread really far. I was most afraid of the crabs pinching me, but it was a thrill jumping and running in puddles and muddy sand. I remember trying to open a clam shell and thinking, how would anyone ever figure out how to open these to eat them? They were sealed so tight almost like a rock! I didn't eat any unfortunately. I was curious if they looked anything like mussels. It is lemon and orange day also though, and that works quite well. Or maybe just another clam chowder day with potatoes.

How I Celebrated



If I were to tell you I had any regrets in life, this soup would be one of them. This was an experiment gone wrong. I decided to try and combine turkey neck in the sundubu jjigae. Not only did I not have all the right ingredients for sundubu jjigae, I haven't tried it so I really was really a mad scientist in the kitchen. The recipe said that you can add meat to the sundubu jjigae, but I feel like a crock pot idea was a bad one. Honestly I almost vomited that is why the video is short. I couldn't finish one bite of tofu. Probably will go to a Korean restaurant for this one, if I ever have the guts to try again!

    Tofurkey is the way to go, however, I doubt that there is a vegetarian "turkey neck". It looks like the Korean Sundubu is with tofu and veggies already.

I'm sure that I have had turkey neck soup, well, just turkey everything soup. I know I have seen turkey necks on my plate before and felt disgusted, and still feel okay eating turkey tail haha.

How I Celebrated



Nate made some good stuff! So Lemon cake mix with some yogurt, pudding mix, lemon juice, whipped eggs with an extra yolk and butter. These are some of the things that makes it special. Think about if he would have used lemon yogurt and lemon pudding mix!! Plus his glaze had lemon zest. Super fresh and moist! And fresh blackberries? He knows just how to steal my heart haha

So we got the Sara Lee versions of cupcakes and put some cherry pie filling with whipped cream on top. This way you don't have to make a whole cake with nasty cherry stuff!

 Reading the history of these foods, I just think, this is why we all just need to get along. How else can we partake in the deliciousness of another culture? Can you imagine never having a kebab? WHAT? It is always so appealing to the eye.

How I Celebrated



I'm in Utah for Easter so I recruited my little sister for help. I got some deli ham and pre-sliced pineapple because I was on a quick vacation. Quick and easy!

History

I did not realize that ham and pineapple was an Easter "thing". Come to think of it, I do think we made that in the cafeteria every year. At home, it just wasn't the star. Samoan feasts have way too many kinds of meat to focus on one. Also, I think I had real Spanish Paella maybe once in Spanish class because one of my teachers had lived a significant amount of time in Spain and knew how to do it just right.

Had a mix of swiss miss and that epic cacao bru stuff. Also a Big Hunk for nougat day (the peanuts tasted a little stale, and the expiration date is not until next year!). And then I had some spinach salad and spinach pasta! Lots of food day means a good day.

 Ah spinach. One of the few vegetables I like. However, we did over-do it for a while, and having too much spinach on hand makes for wilted spinach. How does wilted spinach make me feel? BLEH. Cocoa? Well that is the best plant ever.

Since it was waffle day and lobster newburg day, we put them together for a savory kind of waffle topping. Fishy waffles, I guess. They were okay. We didn't have lobster by the way, but it is real crab meat this time. Very shredded real crab meat.

Nate was inspired by Chipotle and he made some spicy guac. The Melba Toast is super bland, but it works well as a chip too. I am not really sure why that is a thing or why you can buy it at the store like I did. It is basically a crouton chip with zero flavor.

    Make sugar free bread for your melba toast. Chips and dip are usually savory, so you are in the green.

    Once again, just gluten free bread to make your toast, chips are generally gluten free, just watch out for what is being used as the thickening agent. Try some of these recipes.

    As long as you aren't going for bacon dips or chili nachos, I think you should be fine.

Hummus was one of the first dips for chips, and it was the last one that I tried. The dip most popular in my house growing up was cottage cheese. I had the other dips at parties, and I also loved going to my friend's when she made artichoke dip.

 I have trouble drinking my full 8 glasses every day. I just don't remember. How sad is it that I take that for granted? I definitely appreciate hot water after taking cold showers in Samoa or not knowing for a lot of the winter in China how to turn on the water heater. I'm pretty sure that my amazon smile account is contributing to a water charity. It is so important!

How I Celebrated



Nate bought some more of those small french bread baguettes that we used for the artichoke dip last week. Strawberries here are usually from Cali, but I guess the ones we got are from Mexico this time. But we bought them here. I know there is a Strawberry festival somewhere on the coast north of us or something, but that is kind of a long way and too much mula right now. Oh and of course, some frozen corn dog. Of course I would rather have a deep fried one (fresh) but what are you going to do at 4 in the morning? We opted not to do the crunchy tacos this time. Enjoy! P.S. Why am I sweaty? It is a little thing I like to call Dance Central. You should try it sometime.

    Strawberries are great, tacos usually are not seasoned with sugar. This recipe for sugar free and gluten free bread uses palm sugar, so it still might need a little tweaking if you feel that still counts as a "refined" sugar. Here is a recipe for sugar free corn dogs.

    Strawberries a go go, make sure you have corn tortillas for your tacos. You can use the above recipe for your baguettes. This recipe uses almond flour for the corn dogs
  • Vegetarian

    Strawberries yes, you can sub TVP for meat in tacos or just have bean tacos. Baguettes are fine, and I know you can buy vegetarian corn dogs or hot dogs to make your own (Nate was vegetarian for a while). Or, skewer some veggies and make sure they are all cut rounded at the edges and pressed close together to look like a hot dog, batter that up and there you go!

Ah ravioli. I really wish I could make my own pasta, but it is very time consuming. Thank goodness for cans and that I don't mind canned food. The apocalypse won't phase me haha. Also, the bio brewed uber monster is really sweet and weird. Non alcoholic though and it didn't smell like piss lol.

    Try this recipe for lacy sugar free and gluten free cookies. Sloppy joes are more tricky cause many recipes have ketchup and bbq sauce. You will have to make your own of both for this recipe to make sure they are sugar free.

    See above recipe for gluten free cookies. Here is a recipe for Gluten Free slow cooker sloppy joes. Be careful about your buns!
  • Vegetarian

    The cookies are fine, but for sloppy joes, try some TVP as substitute for the meat. Still really tasty.

I really wanted to get some NZ Palm corned beef but I had to settle for whatever the local market had. It was pretty good, mostly because I have really really missed the taste of pisupo! Happy St. Patty's day!

The first time I had corned beef that was not from a can was at college. I think I just grew to adore the canned version more. How funny that this Irish dish made it out in a version in Samoa. Too delicious.
I really love the different kinds of honey. It is definitely my sweetener of choice. I want to switch over to stevia, but it is just too expensive right now.

All of the Winnie the Pooh stuff is so cute. See if your local farmer's market sells honey. If you can find those little vendors, it is way better than the store bought stuff.

I did not know artichokes were related to sunflowers. They do look like flowers. The first time I ever cooked and ate an artichoke was with my hubby. New experiences all the time with that one. I think it is weird that you can eat whole artichoke hearts, but that you have to scrape off the edible parts with your teeth cause the "leaves" are scales

How I Celebrated



Bosch pears, light whipped topping, and Nutella. What a great dish. Would recommend, would eat again. Also honey roasted peanuts. Probably could have put it all together if I wanted, but I didn't.

    Make sure you have a chocolate sauce and ice cream that is sugar free. Poached pears need no extra sugar.

The way potato chips were invented is a really funny story. I don't really get the picky eaters who send food back. I think it's funny when people go to a restaurant and then try to tell the chef how to do their job. If you could do better, just don't waste your money then. I don't know. Must have had an angry parent with such picky children.

Campbell's chicken noodle. Classic. Pretty good and fast. I know homemade is better, we have just been busy! Oh and we found those oreos for cheap so what a coincidence.

History

 The best chicken noodle soup I have had is probably the best because it accompanied a fond memory I shared with one of my best friends. I was spending the night at her place and being the excellent cook she is,  she made us some simple chicken noodle soup and tea. We sat out on her covered porch and laughed the night away.

The only time I have had scallops was when we found some frozen ones on sale. I always am wary of frozen food sales, but they turned out ok. Fresh is always better. Just like milky way midnight is better than the original.

I wonder if there are even scallops big enough to be an actual bra. They basically look like pasties. Perhaps mermaids don't really have boobs? I mean, fish don't breast feed, maybe mermaids are more fish than we thought?

How I Celebrated



Alright, we have the gluten free Kashi oatmeal and flax seed waffles going on and Nate went all out preparing some awesome nut syrup. It was like pecan pie! So delicious. He cracked open all those nuts from Christmas, and made enough syrup to cover all the waffles! Kudos.

    Apples are a go (no added sugar). This banana nut oatmeal waffle recipe uses the sweetness of bananas, cinnamon and vanilla to trick you into feeling you are eating something extra sweet.

    Here are some gluten free waffles (don't forget to add some nuts, well actually I guess the almond milk counts.)

Punchbowl on Johnny Appleseed and Oatmeal Nut Waffles
Johnny Appleseed is one of the few American folk tale heroes or legends that I know. Smart guy. I know I always wanted to have a fruit tree as a kid. Mostly tropical fruit trees though. I loved mango and rarely got to eat it. I guess apples are cool. I went to an orchard once. It opened my eyes to all the bazillion different kinds of apples there are. Fujis are still the best.
