May 7

How I Celebrated



This was not the easiest process and I didn't look at a recipe until after I put it in the oven. It didn't come out bad, but it could have been faster. First of all, I dont have super good knives to help me butterfly the meat at the bone, nor had I ever done it before. I cut it and put seasoning on the inside, but because it was not spread out, it was not an even or a fast cook! I also should have let it rest out of the fridge for a while. Anyways, I cut up some onion, carrot and zucchini, smashed some garlic and laid it down as a bed for my lamb leg. After poorly cutting my meat, I placed it in the pan and poured coconut oil over everything, making sure to rub it all over my leg of lamb. Then I made a spice rub with rosemary, salt, pepper, garlic powder, sage, parsley, and chicken base. After rubbing that all over the lamb, I sprinkled the extra around the veggies. Covered in foil, I put it in the oven at 375 for 15 min. It was then I learned I should have broiled it first, though I have never tried and therefore never had a successful broil. I turned down the temp and cooked it for another hour and fifteen minutes. Upon checking the pan, it did not look cooked, so I uncovered it, turned it, and tried it on 375 for another... 25 min? Tried turning on the broil for 10, it didn't seem to do anything! Then another 20 min or so I took it out. It looked cooked and I had some of the outside meat, but then when I cut down into the thick area near the bone, sure enough it was not done *sigh* WHAT A PROCESS.

Punchbowl
Lamb is such an interesting flavor of meat. Seafood tastes a lot alike and even fowl and frogs taste similar, but that flavor of lamb is so crazy. It makes me want to taste other animals. Ah well I will just have to wait until the apocalypse.
